Eat Your Easter Eggs

As many of you know, my son is allergic - severely, deathly allergic - to eggs. If the shells are intact, there’s no problem, but even the most minuscule cross-contamination of actual egg with his food is super bad news. Certainly no scrambled eggs for breakfast, no bread nor cake made with eggs, nothing.

Even the simple act of cracking and cooking an egg while he’s around offers the very significant possibility of some airborne particles causing his upper-respiratory system to swell. It’s happened to us a few times, before we knew what was what.

We’ll still do the Easter Egg hunt for the kids, but my wife and I were talking last night about what we are going to do with the 2-3 dozen hard-boiled eggs we’re going to have.

I suggested I’ll take them with me to work and eat them - maybe 3 or 4 a day - until they’re gone. She balked, arguing that was a terrible idea. What about my heart? My cholesterol would soar!

I maintained that was old, tired, uneducated advice. Seems I was right. Consuming eggs - even lots of eggs - has an insignificant affect on cholesterol levels.

[Says] Victoria Taylor of the BHF. “There is cholesterol present in eggs, but this does not usually make a great contribution to your level of blood cholesterol. If you need to reduce your cholesterol level, it is more important that you cut down on the amount of saturated fat in your diet from foods like fatty meat, full fat dairy products, and cakes, biscuits and pastries.”

So, I say, eat your Easter eggs with little fear for your heart. It’s the desert at Easter dinner that’s going to kill you faster.
